The 'Celiac Vaccine' Nexvax2 is Discontinued

This is a brief news update.  The widely reported "Celiac vaccine" that was in phase 2 clinical trials was not shown to be better than placebo.  I'm disappointed, but also I'm glad they were clear about what didn't work so we can focus on the next steps.  I don't think any disease is "incurable" and certainly not because one drug failed.  Living with Celiac is a hassle and people deserve to have brilliant minds working on possible solutions.

I'm really grateful to ImmusanT for their work and for stopping the trial with integrity.  These days, it's not certain that a drug company will end trials for a failed drug.  So I'm glad they've shown they're sincerely seeking a real, sustainable solution. And it's valuable to me that they're seeking a cure. Which is another uncertainty in today's medical marketplace.  So I want to thank them for their work and I hope to see more ideas from them in the future, as well as a "cure" focus.

A substantial sandwich bread, gluten free! Taking a tiny break from bread machine recipes to present a Stand-Mixer bread recipe today.  I also want to talk about Amylose and what vinegar has to do with gluten free bread.  In the previous articles in this series, I discovered that mixing is a big problem for most bread machines.  That ends today with a Stand Mixer.  I will go back to a bread machine soon, for all the reasons I've already listed, but let's explore the mixer option a bit first. The Great Gluten Free Bread Machine Experiment - Part 7

Say goodbye to itty-bitty bread slices. Another experimental recipe today, part of the learning curve for a bread machine.  Gluten free, no diary, high fiber bread.  I brought up the hydration a whole lot and increased the baking time accordingly.  I added the refinement of a baking alarm after the normal bake was complete, to tell me exactly how long I have to bake it.  This recipe is about the limit in how many cups of flour you can add to a 3 lb capacity machine, about 8 cups if you include the flax, chia and collagen in the flour calculation! There is no psyllium powder in this recipe so if you're sensitive to that, need to stay psyllium free, then this is a good option.  The top did rise, but it formed a valley soon after, probably due to me messing with it too much.  The dough was more like batter and when it rose it was easy to lose air from it by just bumping the machine a bit.  I wanted to try just chia and flax though, to see how it ...

If you've tried your hand at making gluten free flour mixes, then you've wondered how come two types of rice can have totally different binding capacity .  And if you've looked at India's cooking (as I have), looking for secrets of gluten free thickening and binding, you've noticed they use something called a wet grinder to prepare grains and beans before making a thickened sauce or a dough.  Today I'm going to explore this aspect of gluten free cooking because I stumbled on a detail I hadn't found before and I want to share it.
